The Indonesian cassia cinnamon absolutely different from other countries. The Indoneisan cassia is the high grade cassia, its called "koerintje". We can distinguish the Indonesian cassia cinnamon with other cassia or ceylon by color, most of Indonesian cassia has brown-reddish color because it growth in the mountain slope, so its free from any chemical and metal contamination. It also growth naturally and fertilized by compost, it makes Indonesian "koerintje" cassia as the highest grade for cassia and of course more aromatic and spicy flavor. That makes Indonesian cassia be the top sought cinnamon.
